Ooh try this recipe out for dinner!! I found it in a magazine just now! I think I will put it in our February Dinner Menu!!

Ok, so it's 44-degrees outside and we are expecting a hellacious blizzard to blow through tomorrow. What's up with that? Just this past weekend we were sunbathing in 75-degree heat, isn't that crazy?

I want snow, and lots of it!!! Yay snow!!

Sizzling' Skillet Baked Chicken

Ingredients:
2tbsp Mrs Dash Original Blend
4 boneless skinless chicken breast
1tbsp olive oil
2 garlic cloves, slivered
1/4 red onion, sliced
Cooking spray

Directions:
1. Preheat oven to 350.
2. Brush chicken with olive oil and Mrs Dash. Set aside.
3. Add onions and garlic to an 8-9inch skillet.
4. Place chicken on top of vegetables.
5. Cover lightly w/ foil and place in oven. Cook 15min.
6. Increase heat to 375-degrees.
7. Uncover skillet and turn chicken.
Cook 10 min.
8. Remove and cover lightly with foil.
9. Let rest 5min before serving.

On Thursday afternoon, while at the Allergy Clinic, I found this new "Blog Writer" App for my iPhone. I wasn't planning on doing anything productive seeing as how I was being forced to stay at the clinic for at least 20-min after the nurse injected both arms with my meds and I sprung a leak. My arm was itching like crazy and there was a hive the size of a nickel growing bigger and bigger every minute! I hate when I experience a reaction to the shots. It's even worse when my blood doesn't like to clot and a simple poke of a needle brings on a geyser-like squirt that won't clot *Grr*!

Ok so I downloaded the Lite version of Blog Writer and I'm putting it to the test right now. I also found this yummy looking Fondue recipe in an old magazine (Why do doctor's offices always carry ancient out-dated magazines?) If I like the App I may purchase the full version which would allow me to upload images, Yay! The recipe on the other hand, if I like it I may raise my glass of leftover Merlot and drink to this Chocolaty Fondue Goodness!

Chocolate Merlot Fondue

1 cup heavy cream
1 tsp instant espresso powder
1 pkg (12oz) milk chocolate chips
2 Tbsp merlot wine
2 tsp vanilla extract

Dippables:
Pound cake, cut into cubes
Dried pineapple or mango slices

1. In a medium saucepan, combine cream and espresso powder over medium heat. Bring to a simmer; add chocolate chips, stirring constantly until chocolate melts. Stir in wine and vanilla.

2. Transfer fondue to a fondue pot or mini slow cooker to keep warm. Skewer your favorite dippables and enjoy!

SouthShore Chicken Quesadillas

Ingredients:
1-lb boneless skinless (uncooked) chicken breast, chopped into small pieces
1-pkt Grill Mates Peppercorn & Garlic marinade (plus ingredients to prep marinade)
8-10 Burrito size Flour Tortillas
Shredded Colby-Jack Cheese

Instructions:
1.  Preheat family sized skillet to med-high heat.
2.  Prepare marinade according to package directions. Add to chicken breast pieces and turn to coat all 
     pieces.
3.  Add chicken to skillet and cook, turning often, for 15 minutes. Remove from heat.
4.  Place a flat skillet over medium heat. 
5.  Once heated, place 1 - 2 tortillas on the skillet. 
6.  Add cheese and about 2 oz of cooked chicken to one half of each tortilla. 
7.  Fold each tortilla in half to form a half-moon shape.
8.  When the cheese begins to melt, 1 -2  minutes, flip the quesadillas over to heat on the other side for about 
     30 seconds to a minute.  Remove from heat when the tortillas start to get a little crispy.
9.  Slice each tortilla into 4 pieces. 
10. Repeat process with two more tortillas until all quesadillas are done.

Quesadillas make an excellent after school snack. Or in our case, it makes a quick-fix meal for busy families on nights when there isn't time to prepare a traditional family dinner. 



Blogger's Rant:
It's Wednesday, our week is half gone and it sure has been a busy one for us! Track season's begun. Lil'Bit is in training for the sprinting events as well as the long jump and triple jump events.  It's also time for Choir Solo Contests.  Thankfully KtBug's singing coach trains with her before school each week. With as busy as we've been this month it isn't nearly as hectic as it will get when Spring training begins for the kids in football and volleyball!  



 I hope all my readers are having a good week. I'm having an excellent week! My classroom finally has a permanent lead teacher. She is a first year teacher who, before earning her certification in early childhood education and special education, was a paraprofessional just like myself. My students really seem to be warming up to her, Yay!!! 


After dealing with a bad hat and all of us paras having to turn into Mama Bears on survival mode, in an effort to protect the welfare of our students for the past 2 1/2 months, Mrs. C's new friendly face and fresh ideas have been a "Godsend".

I actually dreaded the thought of going to work for the past few months after our last teacher left last November and her position was taken over by an abusive substitute teacher.


 Every day was so stressful my stomach would gnarl up as I pulled into the school parking lot.  I didn't want to be there.  A job I've always boasted to be a joy was anything but when an impostor moved her way into the classroom dawning a dagger-like tongue. The substitute teacher was extremely abusive and we were rendered helpless because of the control she possessed.  We all wondered how she managed to weasel her way into our classroom and gain access to the teacher database as well as being given her own official email account. What was her motive? And why did it seem like her very existence was to cause chaos in what used to be a peaceful classroom?



I don't know how she was able to manipulate others into thinking she was harmless. Behind closed doors she turned into a monster, casting orders, belittling the staff and scaring the students.  I almost lost all faith in my bosses when we pleaded with them to help us after our work environment became hostile.  Little did we know that they were in the works of finding us a new teacher to rescue us. :)




I don't know how, or who our saving grace was, but the substitute was dismissed last week. According to the Substitute teacher, as she bawled her eyes out and forced a hug upon me last Friday morning, the administrators forced her immediate removal from the classroom. The unwanted hug felt uncomfortable. I had to squirm out of her grasp, and she had a tight grip on me. If any tears formed in my eyes it was because I was, 1. forming tears of joy because she was leaving, and 2. shedding tears of pain because my arm was twisted up and tightly pinned between her arm and body. If I were a coyote I would have gnawed my arm free that very instant, but I'm human and I gently pulled free so as not to cause any conflict and rubbed the bright red pressure mark that was left on my arm. 

We all worried as to whether or not the substitute teacher would return on Monday and prayed that we would never have to see her again.





Today we are inching our way back into trusting people. It's hard after the craziness we experienced. Who would've known that so much damage could be done to people, by one person, in such a short amount of time. We are excited to have a new teacher in our classroom but at the same time we are slow at letting down our guard.  We're warming up to her slowly but surely. I just hate the fact that the substitute teacher ruined us into becoming capricious in trusting new people. She took that from us and it will take time for us to heal from that. 



Nonetheless, we have a new teacher who our students have immediately taken a liking too (That alone tells A LOT about our new teacher, which definitely gave us a good feeling about her!) We all agreed that we have faith that our new lead teacher will be a perfect match for our class.  We are also extremely optimistic that this is going to be a fantastic second half of the school year!

Chef Daddy the Engineer Guy..

Personally, I believe the best chefs in the world are men, hands down.  Then there's the SouthShoreMan who used to swear up and down how badass of a cook he was. (...he was all talk and no balls to prove it.)

 SouthShoreMan would annoy me to death when I'd rush through the kitchen prepping dinner, while he stood around the kitchen entertaining our guests boasting about how good of a cook he was! *Grr* (See above? Yeaaa... that's me looking annoyed at him.) 

Ok so on New Year's Day, SouthShoreMan and I sat down in the living room discussing our plans for 2011. I griped about how I've been so busy running the kids and myself around for appointments, sports and clubs that I barely have time to get dinner on the table before 6:30 p.m. He griped about how the pile of clean laundry just keeps growing and agreed that dinner is almost always late. *Blah* (He wasn't supposed to agree with me!!)

I shot back reminding him of his promise to help around the house if I went back to work full-time when we reintegrated our kids back into the public school system after 4-years of homeschooling. (Hellooooo in there!! My ship is sinking with my huge work load!! Do I have to make it anymore obvious??) "Oh...yeah...", says he.

So where was I when I started praising "Men Chefs"? Oh yeah, that's right, my husband is an Electronics Engineer, not a Chef! I need to take baby steps to learn him the ways of a Culinary Expert! First-things-first... "This room is called a Kitchen..."

Believe it or not it didn't take long for SouthShoreMan to learn his way around the kitchen. I thought it would take much longer to train him but that was just poor judgment on my part. 


He takes on a good bulk of our dinner prepping these days.  I'm very impressed and relieved that a huge weight has been lifted off my shoulders! Tomorrow SouthShoreMan will be taking on the huge task of cooking enchiladas for dinner (They have already been prepped and placed in the refrigerator.) because it's physical therapy day for KtBug. 

I guess we will see how dinner turns out tomorrow. All he will need to do is pour the enchilada sauce over the stuffed tortillas and sprinkle with shredded cheese. We make a great team!  His Tacos, Lumpia, Fusilli Bake, and Chili were fantastic, by the way! (yes, I'm boasting!)

My Ohio Country Boy is not only "Mr. Engineer Man", but he's an awesome husband, father, and definitely can now boast at being a good cook. Like I said before, "The best chefs in the world are men!"

p.s. The mountain of clean laundry has disappeared and I've been very good at remembering to put the laundry away as it comes out of the dryer! *pats self on back*

Snow Day & Taco Night!!

Baby it’s cold outside!

Wow-wee! What a surprise it was to wake up to a “Snow Day” today! I celebrated by hopping back under my cozy blankets to snooze for a few more hours. My brood of kids, on the other hand, well they decided to retreat to the family room with breakfast in hand and enjoy a few movies while challenging each other to a game of UNO.

The ice coated trees outside look like life sized figures of Swarovski Crystal as they glisten in the sunlight.
 It’s Taco Night here on the SouthShore.  My Ohio Country Boy, @SouthShoreMan, will be heading the preparation of our meal tonight while the kids assist in prepping the side dishes. .


I’m still sitting in the Physical Therapy Clinic's waiting area while KtBug works with her therapist. I was so bored I took a picture of the chairs while sitting here blogging...and waiting...and *Cleeeeek*, picture!

I wanted to get up and play with those big balls over to the left. It is very difficult forcing myself to sit still when there are cool toys to be played with! I'm going to practice self-control and stay focused on this blog post so I am not distracted. So anyways...

Prepping tacos is super easy, and if your kids are assigned a prepping task it makes prepping time go a whole lot faster!

What you will need:

  • 12 or 18 pk Taco Shells (soft or crunchy), our favorite is the Casa Mama's from Aldi
  • 1 - 2 lbs lean (or extra lean) ground beef or turkey
  • Taco Seasoning, our favorite is Tone's (We buy it at Sam's Club)
  • Mild Cheddar, Finely Shredded (or Kraft's Pre-Shredded Mexican Blend Cheese)
  • 1 head of Lettuce, finely shredded
  • Tomatoe, diced
  • Sour cream, Yum!!
  • Salsa
  1. Preheat oven to 325 degrees.
  2. Cook your ground beef, making sure it's good and crumbled.
  3. Add Taco Seasoning according to package directions
  4. While beef is cooking, shred the cheese, and/or Lettuce, and dice the tomatoes.
  5. When beef is done remove from heat.
  6. Place hard taco shells in oven for about 5 minutes to crisp up. (Soft taco tortilla shells, heat in microwave)
Set-up all fixin's in a row like an assembly line on the counter-top so everyone can build their tacos before communing at the dinner table to eat!


Tip: Left over taco meat? Freeze it for use on Enchilada Night!

Well it looks like therapy is just about done, and @SouthShoreMan has just messaged me, letting me know that I need to stop by the market to pick up shredded cheese. Time to end this post and head for home now!

I woke up with the case of the grumpies but it didn't stop me from posting tonight's main-dish for dinner. I've been using this recipe for just over 12 years and I love it!! If anyone has good recipes it's Betty Crocker. She does it best!!

  • 1/4 cup butter or margarine
  • 1/2 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper 
  • **Seasoned Salt (Season-All)
  • 3-3 1/2 lb cut-up whole chicken

  1. Heat oven to 425°F. Melt butter in 13x9-inch pan in oven.

Editor's Note: (01/22/2011) **SouthShore- Coach Oliver's Twist- I had asked my friend, Coach O., how she preps her fried chicken. She said that the trick to a flavorful chicken is to sprinkle each piece with Seasoned Salt (Season-All) before coating it in the flour mixture. I tried it and we were impressed with the burst of flavor! The printable version of the recipe does not list Seasoned Salt in it's ingredients since that version is an original Betty Crocker recipe. Supreme Pizza Chef's Salad

Today for dinner my plan was to make a Steak Salad, however the kids had other plans.  I dare not argue with their other plans because I've always encouraged my kids to partake in meal planning even if it involved the kids creating their own meal ideas.

This recipe is one of their favorites:

Supreme Pizza Chef's Salad

Iceburg Lettuce, washed and chopped into bite sized pieces
Romaine Lettuce, washed and chopped into bite sized pieces
Cherry Tomatoes, washed and drained
Red/Green bell peppers, diced into little cubes
Pepperoni slices
Italian Sausage, Ground and drained
Mozzarella Cheese, shredded
Italian Seasoned Croutons

  1. Prepared lettuce as you would any salad, making sure lettuce pieces are cut into bite-sized pieces.
  2. Cut Cherry Tomatoes into 4-slices each. 
  3. Add Red and Green Bell Pepper.
  4. Toss lettuce, tomatoes and peppers to mix
  5. Serve salad and allow the kids to top their individual servings of salad with the remaining toppings of choice.

*Serve with Warm Bread Sticks!

Chef's Note: Have you tried Hormel Turkey Pepperoni? For a healthier variation try it out! It tastes just like regular pepperoni, only it has 70% less the fat!! Yum!!

I thought I'd give this "Organization" thing another try. last year was a flop. I think I managed to construct two menus last year, and then low and behold I got lazy and my idea of creating structure in my life flew out the window with my sanity. That's saying I had any sanity at all, which in reality I have very little of.


So two weeks into the New Year and I finally sat down to plan January's Menu. There it is below if anyone feels the need to jump on my bandwagon and attempt to gain back any organizational skills we once possessed. (Or did we?)

Whoa!! Thank goodness Blogger saves my drafts every so often, because I hit the wrong button while attempting to post the menu and I was thrown completely out of the post! I think my laptop is possessed this evening. It's been acting crazy. 
Ok so there you have it, a printable January Menu. I even updated the same menu on the left sidebar for your convenience! Most of the recipes can be found here in the blog. On the right sidebar you will find Labels to find the recipes more easily. 

In my efforts to become more organized I plan to schedule different days out of my week to work on my blog, compose my posts and share my recipes, etc.  

I might as well take some time to back-date what has gone on in the past months. Like just last week I made this awesome Shaving Cream and Elmer's Glue Puffy Paint in school! Boy was it a blast!! I have a picture of me trying to eat it too!! I will post that next, but it will publish as though it came first only because I do plan to back-date the entry. Are you confused yet? Well, good, then you are on the same page as me!

There's never a dull moment in my classroom. Where else can a handful of Teachers and Paraprofessionals get paid to have fun?

 This week we went on an Arctic Adventure to explore Polar Bears in their natural habitat! It was so much fun! On the last day we got to use our fingers to mix up an Ooey-Gooey concoction of Shaving Cream and Glue to make puffy paint for construction paper Polar Bears!  
(Recipe Below)
Lookie here! My lit'l guy and I gooped puffy paint all over our Polar Bear and then we added a Googly Eye so he can see!

The puffy paint looked and felt like sticky Marshmallow Cream so I pretended to eat it! The kids thought I was silly and laughed at me. 

 This week was also "Welcome Back" Week at school!
Each day of the week we had a theme to dress up as. Monday was Twin Day!! 


Mrs. P (Reading Teacher) and Ms. B (Geography/Science Teacher) looked very posh in their blond wigs and pink shirts! Sooo cute! 



Shaving Cream Puffy Paint

1 part Shaving Cream
1 part Elmer's School Glue
Tempera Paint (optional)

Mix shaving cream and glue together (for sensory, let kids use their fingers to mix the cream and glue!). Tint with your choice of paint color. Use hands or popsicle sticks to apply onto construction paper. Let dry for 24-hrs.

*Note: When determining how much paint you will make, measure cream and glue in equal parts. (i.e. 1/2 c. shaving cream to 1/2 c. glue)
